Matcha Ice Cream Sandwiches

After hearing about the health benefits of Matcha, I have been wanting to try if for quite sometime, and am excited to share this new scrumptious recipe with you. First let me tell you a little bit about Matcha. Matcha is a green tea, but because the entire leaf is consumed rather then being steeped in water it is much higher in antioxidants, vitamins and minerals. It also boosts energy and metabolism. The chlorophyll content helps detox the body by helping to eliminate chemicals and heavy metals.

Mocafe and 5 Minutes for Moms are hosting a recipe contest using the Mocafe Green Tea Matcha Frappe which is made with real Kyoto grown tea. The winner will receive a Blendtec blender!!!! I just received my samples on Friday and with the deadline being this Monday (tomorrow) I was feeling the pressure. It's a good thing I work well under pressure, and came up with a recipe that is delicious, easy, fun and nutritious.

Grain free double chocolate cookie adapted from Elana Amsterdam's Double Chocolate Cherry Cookie Recipe found in The Gluten Free Cookbook.

Ingredients:
2 3/4 C Almond Flour
1/4 C    Cocoa Powder
1/2 tsp  Sea Salt
1/2 tsp  Baking Soda
1           very ripe mashed banana
1/2 C    Organic Butter melted
1 Tbsp  Vanilla
1/2 C     Chocolate Chips

Pre heat oven to 350 F and line cookie sheets with parchment. Mix almond flour, cocoa powder, sea salt, and baking soda in a small bowl. Combine banana, butter and vanilla in a medium bowl. Then combine the dry and wet ingredients together. Add chocolate chips. Scoop a tablespoon of batter onto cookie sheets and flatten. Bake for 10-15 mins. Cool before making sandwiches.

Matcha Ice Cream

Ingredients:
1 scoop Green Tea Matcha Frappe
1 can Coconut milk or cream (the creamier the better)

Combine ingredients in a blender and blend until mixed well. Pour into ice cream maker and follow instructions for your ice cream maker.



Ice Cream Sandwich

Spread Ice cream onto one cookie and then top with another cookie, like a sandwich. You can eat as is or wrap and store in freezer. Enjoy!! I know we sure did!

I would like to send a shout out to my our local Serious Coffee shop. They do a lot for our community we really appreciate it. They recently put on a road hockey tournament, with a pancake breakfast. It was so much fun and we are so grateful to them for their generosity!

Trapped Bear

Last night, or I guess it was more like the wee hours of the morning, we were woken by a loud and frightening sound. Rob jumped out of bed to check what it was, and couldn't see anything, so I hopped out of bed and saw a baby bear running back and forth across the lower part of our yard, crying for help. It was the saddest sound ever. We were unsure what to do, so called 911. Just as they answered our call, the bear managed to escape our yard. We could hear it running down the road, and it sounded like it was in the alpaca field for a long while, still calling for help. The whole time I was wondering where it's mother was. Poor baby. It must have been terrified.

I can't stop thinking about the poor baby. I just want to know if it is okay and whether it has been reunited with it's mother, and if the mother is okay, why wasn't she trying to help her baby? So many questions. 

I think I need to be more specific in my requests. Rob and I were talking last night about some new designs for blankets I would like to make. I listed off a few ideas, and said I definitely want a bear. Rob said a bear would be cool. Well Universe, I meant a bear design, not a real bear, especially not a poor trapped baby bear. So the first design I will work on will be dedicated to the baby bear, who I hope is safe and happily reunited with it's family.
